This is a very interesting article and i feel restaurants are long overdue to marry what is healthy and flavorful with what tastes good and usually people associate health food with things that taste bland or flavorless. Sizzler comes as a real surprise for making healthier items with good flavor and they are a corporation that is in need of drastic reform in reference to food quality and preperation(dressing salads 30 min prior to service). Mushrooms such as shitakes mentioned are a great way to deliver meaty rich unami depth of flavor without the fat calories but loaded with protein.
